Landes terrine of duck foie gras with grilled hazelnuts and cocoa
and mango chutney.
White Champagne asparagus served with asparagus flan and fresh tuna in a chilled mousseline sauce.
Medallion of Brittany monkfish with julienne vegetables, squid ink spaghetti and Ardennes saffron threads.
Saddle of roasted lamb with a rich, thyme blossom jus, aubergine caviar, tomato confit and pureed potatoes with aromatic summer truffles.

Two-tone Easter macaroon with fluffy white chocolate mousse and Gariguette strawberries.
